Easy Homemade Noodles | 簡單手工麵

Noodles is actually a lot easier to make than you might expect. Especially the traditional Asian noodles, there’s usually only 3 ingredients: flour, salt and water. You’ll need about 15 mins to roll these out and the best part is that they freeze well! Make a whole bunch and keep in your freezer, you’ll never have to buy noodles again!

Noodles is another staple in the world of Taiwanese food. Every day, when it’s time to eat, we would ask one another whether we want rice or noodles. However, there are so many kinds of noodles, I wish there were more words to describe noodles in English so I could better explain things.

This noodle recipe is the kind that my family enjoys. It is chewier, thicker and with denser texture. It is great with soup because it doesn’t get soggy and soft fast, great with any kind of dressing because it coats well. Depending on your personal preference, you can make it thinner, thicker, wider or thinner than the recipe so there are lots of variations you can play with!

 

Why should you make your own noodles? Because I find it so much tastier! I love biting into fresh noodles and tasting the fragrant of the wheat. Am I crazy? Maybe. But isn’t this the same reason people enjoy bread fresh out of the oven? My mom and I are big fans of fresh noodles, we used to check out all the fresh noodle shops whenever we eat out and loved it. We would try out the noodles and have a discussion on how it is made. Sometimes we would go home and test out making the same noodles ourselves!

There are a variety of ways to make noodles depending on the kind of noodles you’re looking for, but this is the easiest, fail-proof version so anyone can be a noodle genius! Impress your guests with some homemade noodles next time.

 

Few tips on making this noodle: after you mix the water and flour together and formed a loose dough, let it sit for about 10 mins when the dough has absorbed the moisture, it will be softer and easier to work with. This should be a pretty dense dough.

“Kneading” the dough with a rolling pin. This is simply a easier way to measure how many times or how long you’ve kneaded it. Start with 1/3 of the dough, roll it out, fold in the dough from the long ends, turn it 90 degrees, roll it out again and repeat for 5 times or until the dough is smooth or too elastic to work with.

 

If the dough is too elastic to roll out into noodle thickness, let it rest for a while. It will help loosen the dough up and make it easier to work later.

A chewier, denser noodle, with only 3 ingredients: flour, salt and water. You'll need about 15 mins to roll these out and the best part is that they freeze well!

Ingredients

  • 2C Flour
  • 1/2t Salt
  • 3/4C Water

Directions

  1. Mix together and then make a well in the center
    • 2C Flour
    • 1/2t Salt
  2. Add to the center of the well and mix in the dry ingredient and form a loose dough
    • 3/4C Water
  3. Let the dough sit for 5~10 mins to absorb moisture
  4. Separate the dough into 3 portions so it’s easier to work with
  5. With a rolling pin, take one portion and roll it out, fold in the dough from the long ends, turn it 90 degrees, roll it out again and repeat for 5 times or until the dough is smooth or too elastic to work with
  6. Switch to another portion and do the same while the first one rests
  7. Come back to the first portion and roll it out to 1/10″(0.2cm) thick (or your desired thickness)
  8. Dust the flat dough with corn starch so it doesn’t stick and fold it 4 times so it is easy to cut
  9. Cut your noodles into 1/3″(0.7cm) wide strips (or your desired width)
  10. Boil a pot of water and cook it for 2~3 mins and enjoy! (or group them into a ball and freeze them to use in the future)
